At Josie Bones we love food, and we love beer, but most of all we love them together. We love to cook with the entire beast, from a pig’s ear to a lamb’s tongue to a cow’s tail, and with the best of the season’s produce, tailor made for grazing and sharing delicious food. We are also passionate, if not a bit fanatical, about our beers. We want to see more beer in the dining tables of this country so we like to treat this marvellous substance the same way most places treat wine; with respect, love, and just a little bit of geekiness.

Hi Chris! Happy new year and I wish your restaurant very successful year, which it sure will be. You were of course also my favorite competitor all the time in the master chef Australia, couple of days ago it was the last episode shown here in Finland. So, well… you`re my idol, and I hope you will some day read this message and i would be very glad if you would send email to me so I know you`ve read this:) I hope I will day or another visit Australia and then I definitely know where to come!

Just wanted to say thanks.
We visited Josie Bones on Saturday 23rd and it was the highlight of our food-centric trip to Melbourne.
Started off with the milk stout you had on draft (excellent breakfast beer 🙂 ) and then tried the Stonecutter from Renaissance in NZ. My companions had a Lindemans, a Japanese Ginger Beer and the pilsner that was on draft. All fantastic.
We were seriously impressed with the obvious passion and top end level of knowledge. The guy who helped us through the beer list was happy to chat and make some recommendations for our ‘I fancy something like this’ requests.
And that was just the beer. We had a couple of plates of crackling, the assiette of pigs head (superb Black pudding), the pork belly, the squash with raclette and the corn salad. All delicious but the assiette was sublime; rich, tasty, incredible textures…good job.
So thanks again. I’ll be recommending you far and wide and will most definitely return next time we’re down in Melbourne.

I loved your style and Im agree with using everything from the animals, in fact my moms favorite is beef tail in adobo sauce with raw onion on the top its a mexican recipe from my grandma.

Me and my wife are big fans of the Masterchef shows
and we just watched you get kicked off.
I went online right away too find out if you did publish that book.
Imagine how surprised I was when I found Josie Bones.
The place (what I can see on the pictures) looks great.
If we ever travel to the other side of the world we will definitely visit Melbourne
I’ll start saving up right away.

I come from the Netherlands and I like Masterchef very well. In our country they send now season 1 on the tv. Now I’m looking the final week of Masterchef Austalia 2009, and I search on Google how you do, and I saw that you both (Chris and Julia) started a restaurant. It’s funy that you’re become a couple. Are your both still together? I love the way you cook Chris and Julia, and when I’m in Australia, I’ll visit your restaurant. Have a great time!

I’m from Portugal (imagine), more precisely from Terceira island (Azores), (the other side of the world), and in our culture we love pig, cow, chicken and the greasier the better. One of these days i was watching masterchef and you made half of pig head and present the the judges… oh my god… it looked heavenly. Since that day I’ve stayed your fan, and maybe some day, i will have the chance to visit Australia and Josie will be in my rotary. Meanwhile, i invite you to look to some of our food, that probably you will love it too, like, Alcatra, Bifana (it runs great with a beer) or Cozido à Portuguesa…

Just ate a wonderful dinner @ your place on Sunday night. It took us a year to get there, but we did! Well worth the wait.
Still drooling over the smoked cheddar croquettes & the goat curry. Divine.
